2 1/2 oz London Dry Gin
3/4 oz Rose Organic Syrup
2 Sprigs of Fresh Thyme
1 1/2 oz Lemon Juice
3/4 oz Egg White (one egg)
Remove thyme leaves from stem and muddle them in a shaker. Add the rest of the ingredients and dry shake. Then add a large cube and shake again. Double strain into a chilled coupe.
Garnish with edible flowers or a thyme sprig.
