Lakeside Mojito

Lakeside Mojito:
-2oz vanilla rum
-1oz fresh squeezed lime juice
-.5oz strawberry fennel syrup
-4-5 mint leaves
-rhubarb soda to top
Garnish: mint sprigs, rhubarb curls

Line a glass in rhubarb curls and fill with ice and torn mint leaves. In a shaker, muddle more mint with syrup, add rum and lime juice, and shake with ice. Strain and pour into prepared glass, top with rhubarb soda, and garnish with a big bundle of mint. Enjoy!
